MILK QUALITY
section under construction ...
Milk is perhaps the food
most controlled ever.
Since 1980, milk has been remunerated not only on the basis of quantity but also for quality , that is to say for the chemical constituents of fat and proteins and for hygienic and health characteristics ( bacterial load , somatic cells ). This means that every month, the livestock farms undergo milk withdrawals by surprise or at each collection, which routinely overlap with the health ones.
The characteristics of the milk (quantity / quality) are strongly influenced by the breeding technique and in particular by the conditions of animal welfare (for some years codified and enhanced by the protocol developed by the Zooprophylactic Institute of Brescia).
